We have a very good bread machine, which we use in France in the summer, and were delighted. I brought it to Germany after the holidays two years ago, used the same mix, and the bread was much drier and not as nice.
We brought it back to France, and the bread was delicious again. I really believe the water quality makes a big difference.
Since my water here originally is saline water that is treated to consumption, but is still pretty disgusting (we wash our teeth with it, but that's pretty much it) I am not even thinking of getting the bread machine here. Even the famous Britta Filter (I don't like them. They are very good, but Britta is Superman's ex name) do not change the water taste, and I don't even want to know what is in it. Of course I could bake bread with mineral water, but that's a huge hassle considering we want to eat less bread, not more....
