Good morning, all! Happy Wednesday! Great tea today... my unbranded Keemun, but really bad croissants! I saw some fresh mini croissants in the bakery section of the market and thought I'd save myself some trouble of making them again... Bad move. Texture more like bread than croissant, and so sweet I think I need an insulin shot! I'll double up on the tea to make up for them!

Top of the line Cuisinart machine. I figured that if I was going to do something, I should use the best tools. It made up to a two-pound loaf (1, 1.5, and 2lb) and had three different 'crust' settings, 12 programmable auto modes in the menu, delay start button, etc.

As for the recipes, of course the ones that came with the machine, as well as several other machine recipe books. Still, nothing that would come close to 'good' bakery bread for me.

As I said before, I'm not a great baker, but I do know the difference in flours. I regularly make my own croissants, biscuits, scones, etc... Small stuff. And I can bake a really good Challah bread, but no others that will rival a bakery. The machines just don't give me the kind of finished bread I want.

I will say that I used the machine regularly to mix and knead dough... I just don't like the way they bake them. It made the very best pizza dough for the deep-dish pan-style pizza! The machine was very good for that, as well as for the 'first rise.'

Now... another cup of unbranded Keemun!
