Thailand ไทย Reading

My niece brought us a nook. We live in a rural village in Northeastern Thailand. I had to wait a couple weeks before going into the big city to find a wifi place where I could register. I've downloaded some classic children stories and a few historical novels as well as newspapers.
I want to be able to read Thai on the Nook Simple Touch. I don't know how to set this up yet.
I'm looking for a way to change the dictionary to a simpler one. I have 2 11-year-olds and they need to use the dictionary especially since English is their second language.

I've also downloaded some auto repair technical sheets for our 17-year-old. I'd like to be able to put maps on it. And, I'm looking for some cook books.
