If the tags are still in the book metadata, then one by one you could go to the edit metadata screen - the individual one, not the bulk one. You click on the book itself in the upper right hand corner, and then you click the 'i' icon. That will extract the all the metadata from the book and use it.
Problem is I don't know if there is an easy way to do this in bulk if it works.
