If the EPUB is properly created then doing an operation that takes the file out of calibre wilo write the metadata at that time. E.G. Save to disk, send to device. The metadata in an EPUB should always be able to be updated. The cover is hit or miss depending on if it is properly defined. If it is not you will either need to convert or use Sigil to correct it.
