Open Amazon site and go to Kindle Store › Kindle eBooks. On left side, you should see available titles for an specific gen or topic.
To give you an example, for non fiction, there are about 711k available titles. Computers and Internet, about 26k. And so on. I'm bad with numbers
... so if you add all those, you will get the total amount of Kindle titles you can get from Amazon's store.
