Two individual dumbells at the same time are better than the long bar holding the same total weight or even a bit more weight. This is because the body has to work harder to keep the individual dumbells under control. The muscles become stronger, and more muscles are affected. You will notice that it is easier to lift more total weight on a long bar than with two dumbells.

Even better in some ways are the swinging weights, kettles, pins and the like that work the torso along with the arms and legs.
Bands, and wall pulleys lend to strength in every direction. Pilates, medicine balls all help

I am not much for machines except for rowing machines and then treadmills, and bicycles mainly for endurance.

I will pass by much on martial arts except to suggest you try to find a place that has the hanger and platform for a speed bag and learn to use it. There are different substitutes at sporting goods stores that sit on the floor. Sometimes people become slow because of their weight routine. Think strike and recoil, strike, strike, and recoil. Different angles, moving all the time. Keeping your feet moving is as important as anything else. Your opponent can't rely on where you are.
Likewise go back to your childhood and bring back your jump rope. Great for the footwork.

You have a sound background, you should have fun.

And finally a word of caution. The mightiest sword is never drawn. Avoid fighting. Like the kids used to say "Sticks and stones can break my bones, but words can never harm me." Don't be afraid to run or yell or use your spray. Only fight when there is nothing else and then yell loud while you are doing it.
