Also, I note a different interface on the new touch versions. There are some aspects I like, like the expanded dictionary window, and some I don't appreciate, like the shopping cart button on the menu bar. Will the new interface be forced on existing Kindle 3 users via a firmware update? The blatant shopping cart button alone makes me want to stick with the current interface.

The Kindle Keyboard is the Kindle 3 just renamed.
The shopping cart icon is only shown when you are in the Kindle store not on the home screen. The home screen doesn't show book covers.
