I think Superman's new armored look works for the character. It could indicate that his level of invulnerability has been reduced and he needs some armor. I have no problem with changes to the costume, as long as it stays true to the character.
As far as the number of comics goes, I think it depends on the character. Some characters, like Superman, have been able to consistently maintain more than one title a month. Others, like The Martian Manhunter, have had a problem maintaining a single monthly series.
When it comes to crossovers and long story arcs, for me it's one of the things that makes comics great. From what I've seen, most other media (including television, movies, and books), the stories are contained within the series and rarely crossover (excluding spinoffs).
As an example, "The Great Darkness Saga" in "Legion Of Super-Heroes" was a story arc that took over two years to play out. The writer did an outstanding job, allowing the story to be revealed slowly and building to a massive epic.
