You are grammatically correct, but in Latin (and Greek) you are allowed to assume the verb 'to be' in many contexts.
As Wikipedia says:
'Bartlett's Familiar Quotations, without attribution, renders the phrase as
de gustibus non disputandum; the verb "to be" is often assumed in Latin, and is rarely required.'
