They should be eaten 'al dente', that is the exact moment that they loose the hard core and become soft.

Why? For an important nutritional reason. From that point on, if one continues to cook them, the Glycemic Index keeps increasing. That means that the sugars are released in the blood stream faster.
A part from negative effects on people that are sensitive to this, it means that the sense of satiety will disappear earlier, and one becomes hungry again.
A sauce that contains some fat, oil or butter, will give a coating to the pasta and make its assimilation slower, thus increasing the amount of time that one feels satisfied.

For us Italian, this is an acquired taste, as Mamma cooked our first dish of pasta exactly like that. But it is based on sound nutritional reasons. So, you Northerners, do cook your pasta al dente and you will feel better, and it will last you longer.
