Question Calibre/ePub Metadata

Sorry if I should have found the reply in the Manual/Forum: tried but didn't.

Is there a way to tell Calibre to pick the data from a custom column on conversion and add it to the converted ePub metadata? i.e.,

If the answer is to do a command-line conversion with custom params, or something, I would dearly like to know...
