I use
SuperDuper! and Time Machine.
I have SuperDuper! make a bootable clone of my computer, and I just manually backup every couple weeks or so. If my Mac dies, I can just boot up with the Superduper! drive and be back up immediately.
I use Time Machine for the incremental daily backups, but I find the every hour thing just unnecessary, so I use
TimeMachineEditor to have it just backup every morning.
But, SuperDuper! has quite a few scripting features that might meet your needs, one feature will automatically start a backup when you connect an external drive-and it remembers which drive backs up which volumes, etc. It will also do a Smartbackup, i.e. just the files that changed.
