I don't own a PB360+, only a PB 902, so please take my answer with some caveat until an owner of a 360+ enters this thread.

If it is possible you should find this option under Configuration - Appearance - Power off logo.

If it is not possible (like with the PB902) you can only achieve it "the hard way": take the book cover image, convert it to a bmp file, copy it into your reader and set this image manually as power off logo. But you would have to do this with every single book anew.
