Sigil already makes numerous concessions to Apple's failure to meet ePub standards, and these are being expanded (such as retaining the displayoptions xml and supporting code injection for working around the bugs in iBooks). But HTML5 tags will have to wait until Sigil is transitioned to support ePub3. If you really need to add audio and video, inject the tags with javascript.
