I have resolved my problem.
The location of the logfiles when running the server from within Calibre is, as PeterT pointed out, %APPDATA%\Roaming\Calibre.
When running Calibre as a service, on my system the logfiles are located on windows\system32\config\systemprofile\appdata\roam ing\calibre.
I did not find the files via a search because I had no access to config and lower.
