I don't like the double-page display, either, but holding the iPad in the vertical position will display just one page. The double-page thing is only used in landscape mode, I believe.
Of course, paper books display in a double-page format to save paper, but I can only read one page at a time, so I don't see the point of displaying two at a time on a screen.
