There was a question when you installed. The defaults were all those you mentioned.

What OS are you using?

In windows, you need to remove (Sigil) file associations for those you don't want. Open (file) Explorer: tools: FOLDER options: On the File types tab:
Locate the extension you don't want, say TXT select it. click Change.
Select the default program that you DO want to use for that type. (tick Always use) and click OK (all the other programs are still available on the Open With context menu)
