If you are still into scanning I would consider adding a OCR program to convert the output to text. Some will even covert to a word document which can then be saved as RTF, HTML, TXT and you can even incorporate MS's reader format. From these you can create PDF files that will allow text flow.

OMNIPAGE is one OCR program that I have used and it worked great.
