OK... that must explain why a simple plate of Insalata Caprese at "Le vecchie Mura" in San Gimignano tasted delicious, and why we were never able to have something similar with buffalo mozarello bought in Belgium...
(So glad... within less than two weeks we're in Italy again... Veneto this year.)
