Creating a 'Night Mode' epub for viewing in iBook on an iPad ???

I have an iPad 2 and really like the iBook reader except for one thing. There is no 'Night Mode', i.e. light text on a dark background. I just tried making a white text on black background RTF file and converting it to epub. (I used RTF since I am more familiar with MS Word than I am with Sigil.)

What I ended up with (both on the iPad and using Calibre's epub viewer) was a white text on white background.

Does anyone have suggestions how I could get a pseudo NightMode epub to view with iBook?
