(1) does Amazon guarantee free 3G access "forever"(downloding books,
simple internet browsing, checking Gmail, etc)?
Nothing is forever. Everyone's TOS are "subject to change". That being said, I don't see anyone offering anything better, and there are no indications that there's any changes coming.

(2) can I put non-DRM books(PDF, MOBI, or EPUB converted to MOBI,
from non-Amazon sources on the Kindle? If so, can Amazon see which
such books are on my Kindle? Obviously Amazon knows what books I've
bought from them. I just want to know if they can monitor what I read.
Can you put other books on your Kindle, from non-Amazon sources? Certainly.
Can Amazon tell? Probably, if you connect up to them. But honestly, they don't CARE.

(3) the sound from the headphone jack... is it mono or stereo?
Stereo, I think. Honestly haven't paid attention, since I mostly listen to Audible books on it, where it wouldn't matter.

(4) can the Kindle ignore the font colors specified on websites? (i.e. make them
all black for easier reading) I can do this on my IE browser on my PC.
It appears to. But keep in mind that the Kindle browser is pretty basic.

(5) can the Kindle connect to the internet in foreign countries that use GSM?
Yes.

(6) since the Kindle can browse the internet, can it be affected by viruses?
Probably. But given that it has a propietary OS, you'd need a virus that is targetted to Kindle, and I don't see that as real likely.
