What I'm not sure about, though, is whether or not updating the book "resets the clock" in getting the approval completed.

I feel like this should be possible, but I'm in iTunes Connect right now. When I click on the title, my only 2 options are "edit metadata" and "edit pricing" I can't see anything about the actual epub file.
