Beef shoulder meat does need some slow lovin' care to cook it. KK, 'Arm Steak' is just a thin cut from the same area as a shoulder roast, and requires the same kind of treatment.

And it was WONDERFUL!! Probably mostly due to the marinade. I put it in a shallow baking dish and baked it at 350 for an hour and it was great! The sauce was great over fries, too, LOL.
Stitchawl, where in the States will you be? Not Illinois, I'm sure, unfortunately... LOL.
