The iTunesMetadata.plist is a files that gets added when you put your epub through itunes, most likely when adding it to an apple device. You can just unzip your epub, and delete this file, and it should validate.

Just make sure to not run your epub through itunes until after you validate it, because itunes automatically adds that plist file.
