Go to Chongqing and try it there too lestatar - I wimped out and had the gweipo version with chicken soup, dead fish, slices of recognisable meat and veggies. Apparently the local version with spicy soup is served with live prawns, 'head cheese' (pigs brains), tripe/intestines and veggies.
Just had sausages and mash from Great in Pacific Place - heaven!
