Try using the latest CM7 nightly build from

http://download.cyanogenmod.com/?device=encore

I am using the file "update-cm-7.1.0-RC1-encore-signed.zip" and it is rock solid. I believe it has several bug fixes including some for WiFi issues.

Here are the steps :

- Power off the Nook and pop out the SD card. Connect the SD card to your PC/Laptop etc.
- Download "update-cm-7.1.0-RC1-encore-signed.zip" and copy to the SD card.
- Put the SD card back in the nook and power on. Once it has started up, hold down the power button till a menu pops up. Choose 'Restart' then 'Recovery'
- The Nook will reboot and install the update file. It will power down automatically after install.
- Power on the Nook.
- Profit (.... I think)

Good luck.
