I have had both black and white Kobo models previously, but I settled on black for the Kobo Touch. The contrast just looks better with a dark background surrounding the screen.
It's an interesting optical illusion you can easily see if you put the black and white models side by side: the black model looks like it has better screen contrast, when they are actually identical. The white bezel is much whiter than even the new Pearl screen, which makes the screen background look like a darker grey by comparison. Even side by side, your eye insists that the screen of the black model has a lighter grey background.
While it may be an optical illusion, there is a practical effect. Because the black bezel is much darker than the screen, your brain automatically sees the shade of the screen background as "white", making the contrast to the dark text clearer. If you introduce a confusing brighter white bezel into your field of view, that becomes the perceived "white" level, reducing the apparent contrast between the dark text and the medium grey background.
