Use Tag Browser, select Publishers, right click and select Manage Publishers. Change the names to the name you want for all.

You can do the same thing, or use Search and Replace in the bulk metadata editor after selecting books to change.

Same method as for publishers - use the Tag Browser and Manage Tags.
