To use one of the ones that comes with CM7, under CM settings & Tablet Tweaks, you have to uncheck disable lock screen. Although if I recall, that only allows you to use it. I think you have to go to another setting somewhere in the CM menu to set up which type of lock & the passcode. Also, you may have to reboot after you first set it up in order to properly resize the lock screen. Sometimes the lock screen comes up wider than the physical screen, locking you out until you reboot.
