Hi,
you can use a tool like
Easy Thumbnails to create images of the right size.
Once you have your images, connect your touch to the PC. On the new drive, you will see a folder called "screensavers". Create a folder inside the "screensavers" folder, and copy your images there.
You don't need to convert to greyscale, the touch will handle colour images and convert to greyscale when displaying.
