Kovid's answer was the answer you're looking for - it's not possible to change the dictionary language in the ebook-viewer.
His signature (attached to all messages he posts on this forum) includes the notice requesting that people not contact him about DRM removal. It's a generic signature line, and doesn't have anything specifically to do with your question.
