Normally on a Kindle 3 with 3.1 all you have to do is choose "Sync and Check for Items" from the Main Menu and any of your books that have recently gained page numbers will be updated.

Re-downloading a book would have the same effect.

I'd assume that the software works exactly the same when installed on an older Kindle.
