Quoting myself above. I went to the B&N store this morning and brought my new Touch with me. I compared it against the display model, using same book, same font, etc. They appeared identical, which is the good news. So my worries have been eased.

But it is true, IMHO, that your letters can become kind of ragged looking on some screens as you are reading. It seems to vary a lot, and is NOT very noticeable and kind of subtle. But I can see it for sure. I could see it on the store model too, not always on the same page I was seeing it on my device. It doesn't seem to have any relationship to the refresh scheme (every 6 pages, as I understand it), or at least it didn't seem that way to me.

So, it seems that if you are an eagle eye like me, and are seeing some subtle - I stress subtle - differences in the smoothness and nice look of the lettering from page to page, that's just the way it works. IMHO.
