I got fresh corn in my vegetable delivery today. I cut it off the cob, pan-roasted it in a cast-iron pan for 3 or 4 minutes, then added in some chopped onions, bell peppers, salt, pepper, and chili powder and let it stay a minute or two more. I was hoping to have leftovers to add to salads or what-have-you, but there were no leftovers. It was good.
