What I have been doing since I got the NC and it also works for the Touch is to specify a .jpg image in calibre to use as cover and convert epub to epub. when I sideload this file manually (just dropping the .epub file to the Books folder in the NC or touch, not using calibre which transfers a folder that contains the .epub and also the .jpg for the cover), it always shows the cover. The reason I started doing this for the NC is that if I transfer using calibre, the .jpg for the cover would be added to My Pictures and I ended up with all the cover images in the same place as my photos or wallpapers and that annoyed me.
