Besides for not running on ARMs, windows 7 would be way too slow and resource hungry for the edge, so you'd at least have to wait for win8.
Given the typical use cases of the edge, I don't think that the OS would make a lot of difference - in particular since we still wouldn't have the ink API

So the question really is: which kind of functionality and applications are you missing...
