The recordings are in AAC format. In the Library, you'll find them under "Audio". To export them, click the Checkmark icon at the top of the Library, then the checkmark on the file you want to export. At the bottom of Library you'll now see an "Export" which you click.

Since these files are managed by the Library app, using the Library is the safest way to access and manipulate them. Alternatively, you can use the ES File Explorer app to find them under /sdcard/.edge/.esi-content. Beware of deleting or renaming the files using ES File Explorer as the Library app will then be out of sync with these files.

The audio-to-text transcription I'll leave to someone else to answer.
