Well, I am a Kindle 2 fan, and I bought a second one as a backup and for my son to use. Here is what I like about Kindle 2:
Solid construction. There have been far fewer returns of Kindle 2.
Bigger and more solid page turn buttons -- easy to use, but resistant to errors.
Full keyboard -- I like having a number row.
I also like the 5-way.
Easy to change battery.
Buy really cheap cases while you can.
Works great with Duokan for pdfs.
Highlight a word, click the spacebar, and search Wikipedia (I couldn't find how to do this with a Kindle 3).
3G only. I don't need wifi, and 3G works all over the globe.
As for improved contrast on the Kindle 3: yes, it is better, but the last update for Kindle2 gave some improvement. Kindle 2 is quite easy to read. If you don't compare it directly with Kindle 3, you won't have any complaints.
I like my workhorse of a K2i
Oh! All hacks work brilliantly -- no fear of an Amazon update messing things up. I have screensaver hack, font hack, Duokan lite (requires Launchpad), etc. Changed my margins, screensaver timeout, etc.
