Select a bunch of books. Tap C (for Convert )
Adjust the settings you see. Those will apply to ALL selected books.

As you can guess, you lose a lot of fine control.
Books that have been converted on your system at least once, will use the settings stored for that book (unless you take steps to reset to current Preference defaults).
