I really only tried out the stock OS, 1.1 for 3-4 days before upgrading, then 1.2 for a couple days longer before making a CM7 SD card, and since then I've totally replaced stock with CM7. Anyway, in the time I used them, I didn't notice any performance difference from 1.1 to 1.2. Unless Flash just seems like too much to pass up, I would say stick with what you've got, or upgrade to CM7.

If you do want 1.2 and are making a CWM card anyway, you don't need to unroot. Just get a CWM-compatible 1.2 ROM over at XDA. They might even come pre-rooted, but idk.
