Have you considered running CM7 off an SD card? My own husband prefers the B&N stock OS, too, when he's reading, but he likes CM7 for tablety things. With CM7 on an SD card, he just pops the SD card out, turns on the device, and it's 100% B&N stock stuff.
We did the autonooter dual thing for awhile, but I didn't like it nearly so much as I now do CM7 via SD card.

I did consider it, but I'm just too lazy to do it.
I can barely get my hands on the Nookcolor these days, my husband has pretty much taken it over. He likes it better than his Sony, but refuses to admit it.
