You can turn pages by swiping on the screen or with the hardware buttons in note mode just like normal. You just need to make sure you've unchecked the highlight or handwrite boxes in the upper left corner before you swipe to turn but the hard button page turning works always.

Re the original question, I don't know how to do a dictionary lookup in note taking mode.
