"Pop lit" can also be enjoyed by smart people who are willing to reign in their vocabularies and expectations. For some people, simplicity's the definition of escapism because waking life can be wearyingly complex.
I might not be a fan of the books I think you're describing, but I wouldn't belittle someone else's intelligence just because they were.
