Yes, you can use metadata, but you'll have to enter it manually.

Calibre doesn't recognise .tar files as a book type, so when you add the file you'll have to set the file type drop-down to "all files" so that the .tar file is shown in the file picker dialogue. TAR will be displayed as a file type in the tag browser, though.
