In my bag, I always carry the one kind of moleskine notebook that contains music paper. In it, I write the music I hear in my head on the bus and in reception areas -- whenever I'm made to wait. It's the reason I never do crossword puzzles: Because I could be writing music instead.
Finale just isn't as fun on the road as pen and paper. Perhaps tablets will change that eventually.
