Astra, it doesn'tboil the water and then let it cool down. As soon as the water reaches the designated temperature, the heating element shuts off. When the water temp drops below the designated temp, the heating element comes on to bring it back to the correct temp.

It has a 30-minute time limit -- and I'm guessing at this reasoning -- to prevent boil off and stop it from being a fire hazard. But the time limit really isn't much of a problem. I fill a carafe twice within that time period, which pretty much uses 75% or more of the water, and when I want more water an hour later, I simply add more water and turn it back on; within a minute or so, the water is reheated.

I like it because I don't have to wait for the water to cool. When it reaches the designated temp it bells to let me know and I can immediately pour the water. It means I get my tea that much faster.

I also like it because my wife and I drink different types of tea that require different temperature water. Usually hers requires hotter water, so I get my 3-4 cup carafe filled first then put the kettle back on to raise the water temp for her tea.
