There were originally done with the text file Textpad. Then they went through Ventura to become a PDF. I may be able to access the Ventura file which would be the prepress final before PDF.
For books done directly in InDesign an ePub can be created with some work (unless you're just importing PDF's into ID and using it for final layout or something). If you can get a good ePub then you can generally use that as the basis for a Mobi file as well.

No idea if current versions of Ventura have any way of doing ePub (are they still making Ventura?).
