What do you do that is worth the 60% of the writer's income you would be taking from them? (+80% for print, 50% subsiduary income).

A lot of the things that I would expect a publisher to handle -- getting copyright permission for using quotes, creating artwork/illustrations and the like -- are specifically excluded by your publishing contract and is the responsibility of the writer. You also say you will charge the writer for making alterations to the final proof.
