Made some beef barley stew.
I've mentioned this elsewhere, but don't think that anyone has tried it yet.
Simmer (NOT LOW BOIL) the beef for two hours in just enough water/broth to keep the beef covered. Put in an EXCESS of your favorite spices. After two hours throw the water away and rinse the pot.
What this does is to permeate the meat with your spices so that when you make the stew the meat will have an enhanced flavor.
After that make the stew as you will, just remembering that the meat is already cooked so all you're really doing is cooking the veggies and adding spices to the stew in general.
My favorite spices are garlic, onion, salt, and bay leaf. Vegetables are just about everything.
